New Orleans Chef  Donna Castenell knows how to make an authentic Mardi Gras Dinner experience!  Join us at the Chef’s table in our Kitchen for our very special celebration.

Traditionally, we eat hearty on Fat Tuesday ahead of Lent starting on Ash Wednesday.  A menu that will fill your belly and feed your soul includes a King Cake (of course!), Creole Gumbo, Crabmeat pie, Signature Cocktail and so much more.   February 7 at 6:00 pm.  $40.00 per person

Quick Healthy Meals on a Budget:  Everyone knows they should eat a balanced diet of healthy foods, but how can you afford the time, energy and money it takes to pull that off?

Chef Christy explores the Top Ten Tips to turn your kitchen habits around:  Understanding food labels, Shopping locally and seasonally, Using portion control, Making Plan-Aheads instead of “leftovers”, and so much more.  You’ll be stocking your pantry with healthy foods that will be ready to eat when you are in no time!  Join us in the classroom area for activities, discussion and snacks!

February 10 at 10:00 am.  $29.00 per person.

 

Three Course Valentine’s Vegan Dinner Class, and totally hands-on!  Bring your partner, your best friend, your Mom, your boss (score points!)…..whomever you’ll enjoy cooking and dining with!

Learn and Prep and Cook together in The Learning Kitchen.  Dice and chop and mix and cook!  Then enjoy your just prepared dinner together at our Chef’s table, lovingly decorated with wine and candlelight, of course

Menu includes Sparkling Wine or Sparkling Grape Juice, Cajun Chickpea Fritters with Remoulade Sauce, Ven Gumbo over Coconut Jasmine Rice, and Vegan Belgian Chocolate Covered Strawberries.

February 14 at  6:00 pm.  $50.00 per person or $99.00 per couple

A New Twist on Pretzels!  Let’s make German-style soft pretzels! And slather them with some homemade Dijon mustard! Learn the simple secrets to making those crusty-on-the-outside and soft-and-flavorful-on-the-inside pretzels.

You’ll make up four big beautiful pretzels, then learn the easy steps to making your own mustard —  and learn about recipes for other mustards.

Snack on those just made warm pretzels with mustard and other toppings accompanied by a nice wheat beer (if you choose)..  Take home your freshly made pretzels and a jar of your just made Dijon mustard along with recipes and instructions.

February 17 at 3:00 pm.  $45.00 per person.

Knife Skills is an essential class for anyone who works in or around a kitchen, from beginners to those that just need a refresher. Have confidence in your ability to safely and accurately use a sharp knife, know what to look for when purchasing a good knife, and learn how to keep it sharp and maintained.

You’ll get to use several different knives (chef’s knife, paring knife, other bladed tools), handling basic knife cuts: slicing, dicing, chopping, and mincing. Chef Christy brings a large array of knives that will help you learn the right tool for each job. At the end we’ll eat the Crudite and Salsa Fresca we made in class, and we’ll discuss sharpening tools.

February 25 at 1:00 pm.  $55.00 per person.

Don’t Know How to Start? Introduction to Fermentation  gives a basic introduction to two fermented foods: sauerkraut and kimchi.  We will talk through the recipes and basics about fermentation together. What makes them work, the good vs. the bad bacteria.  Then we’ll dive in and work together to make a large batch of each, working together on each step.

February 25 at 3:00 pm.   $45.00 person.  Including a jar of each to take home to ferment,  plus instructions to make again in the future.

    Gosh, Lyn, you seem to know your audience so well! Really gave me a quick jolt that I needed! Here in London there’s a big push to refuse plastic bags when shopping. But you really brought it all closer to home, where it’s much more fun, as you say,…and rewarding! Personally, I also refuse to buy anything in the supermarket that’s wrapped in plastic or cellophane. Means eating more fresh, unpacked produce, too! Fresh meat and fish goes straight into the freezer, ready to quickly defrost in the microwave, or, preferably in a bowl of mildly cold water! Keep ’em coming! Pam
