Cherries Are In! Cherry Lime Slushies

For a  the last several years I have received a shipment of red, glorious, beautiful Dark Cherries – as a Can-bassador for the Northwest Cherries Growers.  These are one of my favorite fruits and I love the challenge of coming up with new recipes every year.

This year’s batch looks the best ever!  I was just in my neighborhood Farmers Market store and saw them there too.

Because it’s been extremely hot here in Atlanta, I immediately dove into making a cherry lime slushie. Very icy!  Perfect, right?

Confession:  I thought of this because there’s a drive-thru that offers them.  Which I indulge in every time I’m nearby.  While they only make this on ice, I thought making it as a slushie was a natural – so cooling!  This recipe is so easy, I’m thinking of freezing the basics (before the addition of ice) so I can make it up many more times.  Lots of ice!  Sounds perfect, right?

A big feature of this recipe is that it is so easy and so versatile.  Make this basic recipe.  Or change it up and add fresh lemonade (about half and half  cherries to lemonade).  And for an evening cocktail, add vodka.  A dark rum would work too.

Makes 4 – 6 ounce slushies

3 cups dark cherries
1/2 cup freshly squeezed lime juice
zest of two limes
1/2 cup sugar (optional, adjust to your taste;  I use organic raw sugar)
2 – 3 cups crushed ice
cherries for garnish

Add cherries, lime juice, lime zest and sugar to blender.  Pulse until pureed and quite smooth.  Add ice and blend.  I suggest you try two cups of ice, then check to see if more is needed.  The consistency should be icy throughout.  Pour into serving glasses and garnish with cherries.
